Homemade Vegetable Soup

What better way to get all your veggies in than in a big pot of warm soup mmmm...

What I used?

1 Brocolli
Handful Spinach
Bunch of Kale
1/2 pumpkin
1 sweet potato
3 Carrots
1 Zucinni
3 Celery sticks
1 Onion
2oz butter
1 Litre vegetable stock
Salt and pepper

What to do?

1. Chop Veg
2.Heat butter in pot
3. Add potato, carrot and onion first and simmer for 4-5 mins
4. Add some stock (not all of it) until the veg becomes soft
5. Once its feeling soft add the rest of the veg, pouring in stock slowly.
6. Let cook until all is soft (20mins roughly)
7. Add rest of stock if havent already.
8. Add salt and pepper

Approx total time 45mins

Ready to serve and pack in tubs for the next few days!

(Soup in bowl for dinner tonight, and Large tub ill bring to work for lunch for the next 2-3 days and the smaller tub ill keep at home for quick snack when I dont have time to cook!)
